Fairmont Beijing names new chef for The CUT

Fairmont Beijing has appointed Christoph Zoller as Chef De Cuisine at the hotel's multi-award winning steakhouse The CUT. Zoller is a promising young chef from Switzerland and hails from Swissôtel Kunshan, a sister hotel in the Fairmont Raffles Hotels International hospitality group's portfolio.

His unswerving persistence in using high-quality, seasonal ingredients brings a new dimension to the hotel's signature steakhouse. His appointment also underlines Fairmont Raffles Hotels International's commitment to developing talent and promoting growth from within its properties and hospitality brands.

Chef Zoller attended a catering college in St. Gallen in Switzerland and served his apprenticeship at traditional local eateries Englers Steakhouse and Mediterranean fine dining pot Restaurant Englers. While training, his talent earned him recognition as the fourth place finalist in Europe's young chef competition, "Jeunes Restaurateurs d'Europe." When he later went on to military service, he continued studying as an army executive chef before embarking on his overseas career in China at Swissôtel Kunshan.

"I am beyond excited to be working at one of the most prestigious kitchens in Beijing," he said. "I believe the hotel's close-knit management and the city's unique food culture will help me explore new culinary styles."

Chef Zoller is always enthusiastic about taking new approaches with cuisine and is never content with present achievements. Drawing his influence from fresh ingredients complimented by an intriguing array of flavors from around the world, his eclectic, yet harmonious cuisine brings a dynamic perspective to classic techniques.

Opened in 2010 in the prestigious Reignwood Centre in the heart of the Chinese capital's Central Business District, Fairmont Beijing is one of China's finest luxury five-star hotels.
