Fuzhou extra-thin noodles, which are renowned for being hair-thin, pliable and strong, is a traditional local specialty in East China's Fujian Province. Originating from the Southern Song dynasty (1127-1279), the fine noodle-making craft is handed down in Gushan, Fuzhou. However, the number of craftsmen continues to decline due to the difficulty of creating the noodles, for even the finest noodle making machine can't produce this kind of noodle like an experienced hand can.
